I like watching the older ones, since they tend to have a few moments that, in hindsight, are funny (in the A Bug's Life one they briefly mention how they'll probably end up using John Ratzenberger in every film). 

Though probably my favorite moment from all the commentaries I've watched (So far, A Bug's Life, Toy Story, Monsters, Inc., twice, and WALL-E, both director and Geek Track, though I don't think I ever quite finished the Geek Track), my favorite moment is probably while the "outtakes" of A Bug's Life play, and they comment that they did this because no one knew how CGI movies were made at the time, and they figured it'd confuse people. 

I also like in the Monsters, Inc. one, where they call up someone who worked on the movie with them to ask something they forgot. Also, "We sand the underside of the drawers!".

I agree those are all great commentaries. I also like when they crack a joke in a commentary, my favorite jokes being in the WALL-E Geek Track.

I finally watched Good Dinosaur's commentary yesterday.

It's definitely one of the best I've seen, from any company. Having the heads of several departments rather than just the higher ups on the film kept the information varied and got it to go pretty in-depth into some of this stuff, and I loved that Sohn was regularly encouraging them to explain things. Plus it had a lot of interesting trivia moments and amusing anecdotes. 

Favorite moments include the effects supervisor trying to explain how the river works, the lighting supervisor talking about how the sky is an actual 3D space with tons of clouds in it rather than a matte painting, and their discussion on Sam Elliot's voice.

"I was like, 'Did you do something to this? Did you do something with the bass?', and you were like 'No, that's just Sam'.".

The Finding Dory commentary was pretty hilarious. Ending it with "We wanted the film to end with Barracuda at drop off" Those dorks lol. And Andrew clearly had a lot of fun talking about his clam.
